Dip
Feel free to play around with the vegetables, just keep the first 5 ingredients intact. Use your favourite cheese or mixture of cheese.

Ingredients: (approximate amounts)

1 (14 oz) can refried beans
1/2 cup sour cream
1/2 cup salsa
1/2 cup guacamole

1/2 cup cheese (cheddar or mixture)
Small jalapeno pepper (optional)
2 medium tomatoes
2 green onions (optional)
1 yellow pepper (optional)
3-5 leaves of romaine lettuce
1/4 cup black olives (kalamata if possible)

Method:

In a 9" by 13" pan spread the entire contents of the can of refried beans evenly over the bottom. Spread the sour cream on second, then the salsa and guacamole. Evenly sprinkle each remaining ingredient in whatever order seems best.

The recipe is really quite versatile, feel free to add something if you think it would be good. Shrimp might be tasty - I can't really give an opinion as I detest it! As an interesting experiment, try adding feta cheese and perhaps some canned artichoke hearts for a more Mediterranean flavour. Serve with tortilla chips.
