Pesto This isn't the most traditional pesto in the world - I made it when I was missing half the ingredients and it turned out amazingly well. It is mind boggling when served with pasta - if you've never tried it, I highly recommend it. Also good on vegetables. This recipe requires a blender.

Ingredients: (approximate amounts)

1/2 cup fresh basil
12-15 almonds
1 1/2 Tbsp ricotta cheese
1 Tbsp fried basil
1 1/2 tsp nutritional yeast
About 1/4 cup olive oil
Salt to taste
1 Tbsp water (if necessary)

Method:

Grind the almonds dry in the blender until very fine.

Add basil (dried and fresh), ricotta and yeast. Add olive oil slowly, blending in pulses and pushing everything down over the blender blades when it gets too far away. Add salt and water, if desired.

Enough for 4 people on pasta or vegetables.
