Dry Oatmeal Pancake Mix This recipe requires powdered egg. I bought this at a health food store, I don't really know how easy it is to find. If anyone has any information on where you can get it, I'd appreciate knowing. Note: this recipe could probably be vegan, just use an egg substitute and soy milk powder or more flour.

Ingredients: (for mix)

8 Tbsp dried egg
4 Tbsp cane sugar (or brown sugar)
4 tsp baking powder
1 tsp salt
2 cups whole wheat pastry flour
3 Tbsp non-instant milk powder

Ingredients: (for pancakes)
1 cup rolled oats
1 1/3 cup water
3/4 cup flour mix (above)
2 tbsp oil
1/2-3/4 cup blueberries or other fruit (optional)
Butter or oil for frying

Method:

Mix all ingredients together well. Make sure there are no lumps. Makes enough for 4 batches.

To make actual pancakes:

Mix oats and water together and let stand for at least 4 minutes.

Add flour mix and oil and mix lightly. Add fruit if using. Heat griddle or frying pan with butter or oil. Use 2-3 Tbsp per pancake. Fry until sides start to look dry, then flip and fry on the other side. Repeat with rest of batter until done. Use more butter as necessary.

Makes enough for 2-4 people, depending on how hungry everyone is.
