Apple, Rhubarb & Berry Crisp Use whatever berries you like.. a mixture of raspberries, blackberries and blueberries would be good, or just one of the above. This would be wonderful hot from the oven and with fresh vanilla ice cream... Very warm and comforting. Vegan!

Ingredients: (approximate amounts)

1 large apple
1 stalk rhubarb
1/3 cup cranberries, fresh or frozen
3/4 cups mixed berries, fresh or frozen
1/2 tsp each cinnamon and nutmeg
a pinch of cloves
2 Tbsp or so water
5 Tbsp maple syrup or cane sugar, or
3 Tbsp honey
1/4 cup butter or coconut oil
1/3 cup brown or cane sugar
1/8 cup flour (whole grain is what I use)
3/4 cup oats

Method:

Preheat oven to 375° F.

Peel, core and quarter, the apple, then slice thinly. Cut rhubarb into smallish pieces. Place apple, rhubarb and cranberries into a pan, along with spices and water. Bring to a boil and cook for about 2 minutes, stirring, adding more water if necessary. Add sweetener and berries and mix, then taste and add more sweetener if necessary. Pour mixture into a deep 8-inch pan, preferably glass.

Melt butter in a small pan. Add flour and sugar, until mixed and sizzling, about 1 minute. Add oats, take off the heat, and stir well. Sprinkle evenly over fruit.

Bake for 20 minutes, until topping is golden.
