Ingredients: (approximate amounts)
1 1/2 cups cranberries, fresh or frozen
Purified water
3 apples
1/2 cups raisins (optional)
1/2-3/4 cups walnuts, chopped small
1 orange or
2 Tbsp frozen orange juice concentrate
1/4 cup sweetener (honey, brown sugar, etc)
4 whole cloves
2 tsp cornstarch (optional)

Method:
Core the apples and peel them if you want. Chop small. Wash cranberries.
Prepare the orange - zest it and squeeze the juice from it. (Discard any
seeds.)
Place cranberries and cloves in a deep pan and add just enough water to
cover. Bring to a boil, and simmer, covered, until cranberries start to
pop, adding apples and raisins if using part way through. (Takes 5-10
minutes)
Add remaining ingredients except for cornstarch. Let simmer for a minute
or two, adding more water if needed, or boiling with lid off if there
is too much liquid. Taste and adjust seasonings.
If you're in more of a hurry, add all ingredients except nuts and cornstarch
at the beginning and kinda crush the cranberries. Mix cornstarch with
a little water until disolved, then add and stir well. Bring to a boil
until starting to thicken, add walnuts and take off the stovetop. Cranberries
and apples are both naturally high in pectin, the naturally occuring thing
in most fruit that makes it jel, (Same thing they use for jellies!) so
you really don't need the cornstarch.
Makes enough for 6-8 people
